How to Make Baked Ziti With Four Cheeses
- Melt 4 tablespoons of butter in a medium saucepan over moderately-low heat. Whisk in 1/4 cup of all-purpose flour and cook for 3 minutes, stirring constantly.
- Remove from heat and whisk in 3 cups of hot milk until smooth.
- Return the pan to medium heat, bring to a gentle boil, whisking constantly, for 10 minutes, until the sauce has thickened.
- Remove from heat and stir in 1/4 teaspoon of ground nutmeg, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
