How to Make Baked Ziti With Four Cheeses

  1. Melt 4 tablespoons of butter in a medium saucepan over moderately-low heat. Whisk in 1/4 cup of all-purpose flour and cook for 3 minutes, stirring constantly.
  2. Remove from heat and whisk in 3 cups of hot milk until smooth.
  3. Return the pan to medium heat, bring to a gentle boil, whisking constantly, for 10 minutes, until the sauce has thickened.
