How to Make Banana Baked Oatmeal

  1. Preheat oven to 350°F (175°C). Grease a medium-sized (approximately 8x8 inch) casserole dish.
  2. In a large bowl, cream together 1/2 cup (113g) softened butter and 3/4 cup (150g) packed light brown sugar until light and fluffy using an electric mixer.
  3. Beat in 2 large eggs one at a time, then stir in 1 teaspoon vanilla extract.
  4. Mash 3 ripe bananas with a fork and add them to the bowl along with 1 teaspoon ground cinnamon and 1/2 teaspoon ground nutmeg.
  5. In a separate bowl, combine 3 cups (375g) rolled oats, 1 1/2 cups (355ml) milk (any kind), and 1/2 teaspoon baking soda.
  6. Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
