- Preheat oven to 350°F (175°C). Grease a medium-sized (approximately 8x8 inch) casserole dish.
- In a large bowl, cream together 1/2 cup (113g) softened butter and 3/4 cup (150g) packed light brown sugar until light and fluffy using an electric mixer.
- Beat in 2 large eggs one at a time, then stir in 1 teaspoon vanilla extract.
- Mash 3 ripe bananas with a fork and add them to the bowl along with 1 teaspoon ground cinnamon and 1/2 teaspoon ground nutmeg.
- In a separate bowl, combine 3 cups (375g) rolled oats, 1 1/2 cups (355ml) milk (any kind), and 1/2 teaspoon baking soda.
- Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
- Pour the batter into the prepared casserole dish and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown.
- Let cool slightly before serving. Enjoy warm, optionally topped with fresh fruit, nuts, or a drizzle of honey.
Chef's Tip for Extra Flavor
Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
