Ingredients for Banana Ice

  • 2 (12-ounce) cans evaporated milk
  • Brown Sugar
  • 4 ripe bananas
  • 2 tablespoons fresh lemon juice

How to Make Banana Ice

  1. In a large bowl, beat 2 (12-ounce) cans of evaporated milk with an electric mixer until thick and fluffy, resembling mousse. This should take about 5-7 minutes.
  2. Gradually add 1 cup of granulated sugar, continuing to beat until fully incorporated.
  3. In a separate small bowl, mash 4 ripe bananas until completely smooth and pulpy.
  4. Stir in 2 tablespoons of fresh lemon juice into the mashed bananas.
  5. Gently fold the banana mixture into the whipped evaporated milk mixture.
  6. Mix until well combined and uniform in color.
  7. Transfer the mixture to a freezer-safe container with a lid.
  8. Freeze for 1 hour.
  9. Remove from the freezer, stir thoroughly to break up any ice crystals, and return to the freezer.
  10. Repeat step 9 every hour for the next 3-4 hours, or until the ice cream is firm.
  11. Transfer the banana ice cream to your refrigerator 30 minutes before serving to allow it to soften slightly.

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
