How to Make Banana Tres Leches Dessert
- Preheat oven to 350°F (175°C). Grease the bottom of a 13x9 inch baking pan with shortening or cooking spray.
- In a large bowl, mash 3 ripe bananas. Add one box (15.25 oz) yellow cake mix, 1/2 cup water, 1/3 cup vegetable oil, and 3 large eggs.
- Beat with an electric mixer on low speed for 30 seconds, then on medium speed for 2 minutes, scraping the bowl occasionally.
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. (High altitude: bake 35-40 minutes)
- Let the cake cool completely in the pan for about 1 hour.
- Once cool, poke the top of the cake every 1/2 inch with a long-tined fork, wiping the fork occasionally to prevent sticking.
- In a separate large bowl, whisk together one (14 oz) can sweetened condensed milk, one (13.5 oz) can evaporated milk, and 1 cup heavy cream until well combined.
- Slowly and evenly pour the milk mixture over the cooled cake.
- Cover the pan and refrigerate for at least 2 hours, or preferably overnight, allowing the mixture to fully absorb into the cake.
- Prepare your favorite frosting (approximately 2 cups) and spread it evenly over the soaked cake.
- Garnish each serving with sliced bananas and/or toasted coconut flakes, as desired.
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
