How to Make Bananas Foster French Toast Casserole

  1. Preheat oven to 350°F (175°C).
  2. Prepare the Bananas Foster: In a large skillet, melt butter over medium heat. Add brown sugar and cinnamon; cook, stirring constantly, until melted and bubbly. Stir in bananas and rum extract (or rum if using). Cook until bananas are softened and slightly caramelized, about 5-7 minutes.
  3. In a large bowl, whisk together eggs, milk, cream, vanilla extract, and a pinch of salt.
  4. Cut bread into 1-inch cubes. Gently toss bread cubes with the egg mixture until evenly coated.
  5. Spread half of the Bananas Foster mixture into the bottom of a greased 9x13 inch baking dish.
  6. Arrange half of the soaked bread cubes over the Bananas Foster layer.
  7. Top with remaining Bananas Foster mixture and remaining bread cubes.
  8. Cover the baking dish with foil and refrigerate overnight.
  9. In the morning, remove from refrigerator 30 minutes before baking. This will allow it to come to room temperature slightly.
  10. Bake, uncovered, for 45-55 minutes, or until golden brown and set. If browning too quickly, tent with foil.
  11. Let cool for 10-15 minutes before serving. Dust with powdered sugar, if desired.
