How to Make Barley Chili
- In a large pot or Dutch oven, brown 1 lb ground beef and 1 medium chopped onion over medium-high heat until the meat is no longer pink. Drain off any excess grease.
- Stir in 1/4 cup all-purpose flour and cook for 1 minute, stirring constantly.
- Add 1 (28 ounce) can crushed tomatoes, 1 (15 ounce) can kidney beans (drained and rinsed), 1 (15 ounce) can pinto beans (drained and rinsed), 1 cup beef broth, 1 cup barley, 1 tablespoon chili powder, 1 teaspoon cumin, 1/2 teaspoon oregano, 1/4 teaspoon cayenne pepper (optional), and salt and pepper to taste.
- Bring the chili to a boil, then reduce heat to low, cover, and simmer for 1 hour, or until the barley is tender and the flavors have melded. Stir occasionally.
- Before serving, taste and adjust seasonings as needed. Garnish with your favorite toppings, such as shredded cheese, sour cream, or chopped cilantro.
