How to Make Basic Soft Polenta
- In a medium saucepan, bring 4 cups of vegetable broth (or water) to a rolling boil.
- Gradually whisk in 1 cup of coarse ground cornmeal, ensuring no lumps form. Whisk constantly for the first few minutes.
- Reduce heat to a gentle simmer, continuing to whisk frequently to prevent sticking.
- Reduce heat to the lowest setting, cover the saucepan, and cook for 30-45 minutes, stirring gently every 5-7 minutes. The polenta is done when it is thick and pulls away from the sides of the pan.
- For soft polenta, serve immediately. For crispy polenta, pour the cooked polenta into a greased 8x8 inch baking dish.
