  • Red Potatoes

How to Make Basil Fries

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, whisk together 1/2 cup grated Parmesan cheese, 1/4 cup olive oil, 2 tablespoons chopped fresh basil, and 1 teaspoon garlic powder.
  3. Cut 2 pounds of russet potatoes into 1/4-inch thick sticks.
  4. Add the potato sticks to the cheese mixture and toss gently to coat evenly.
  5. Lightly grease a 15 x 10-inch baking pan with nonstick cooking spray.
  6. Spread the potato sticks in a single layer in the prepared pan.
  7. Bake for 15 minutes.
  8. Remove the pan from the oven and gently turn the fries.
  9. Bake for another 20-25 minutes, or until the fries are golden brown, crispy, and cooked through.
  10. Remove from oven and let cool slightly before serving. Enjoy!

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
