Ingredients for Bay Scallop Primavera

  • Bay Scallop
  • Sweet Onion
  • Green Bell Pepper
  • Red Bell Pepper
  • Broccoli Floret
  • 2 cloves minced garlic
  • Extra Virgin Olive Oil
  • Italian Seasoning Mix
  • 1 pound pasta (linguine, fettuccine, or your favorite)
  • Boiling Water

How to Make Bay Scallop Primavera

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add 1/2 cup chopped onion and sauté until translucent but still crisp, about 5 minutes.
  3. Add 1 cup chopped bell peppers (any color), 1 cup broccoli florets, and 2 cloves minced garlic. Cover and simmer for 3 minutes.
  4. Remove from heat and stir in 1 teaspoon Italian seasoning. Set aside.
  5. Cook 1 pound pasta according to package directions. Reserve 1/2 cup pasta water before draining.
  6. While pasta cooks, return the vegetables to the skillet. Add 1 pound bay scallops and 1 tablespoon olive oil. Cover and simmer over low heat until scallops are opaque and cooked through, about 3-5 minutes.
  7. Drain the cooked pasta and add it to the skillet with the scallops and vegetables.
  8. Add a splash of reserved pasta water if needed to create a light sauce. Toss well to combine.
  9. Serve immediately. Garnish with fresh parsley (optional). Enjoy with a side of crusty garlic bread!

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
