How to Make Bay Scallop Primavera
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add 1/2 cup chopped onion and sauté until translucent but still crisp, about 5 minutes.
- Add 1 cup chopped bell peppers (any color), 1 cup broccoli florets, and 2 cloves minced garlic. Cover and simmer for 3 minutes.
- Remove from heat and stir in 1 teaspoon Italian seasoning. Set aside.
- Cook 1 pound pasta according to package directions. Reserve 1/2 cup pasta water before draining.
- While pasta cooks, return the vegetables to the skillet. Add 1 pound bay scallops and 1 tablespoon olive oil. Cover and simmer over low heat until scallops are opaque and cooked through, about 3-5 minutes.
- Drain the cooked pasta and add it to the skillet with the scallops and vegetables.
- Add a splash of reserved pasta water if needed to create a light sauce. Toss well to combine.
- Serve immediately. Garnish with fresh parsley (optional). Enjoy with a side of crusty garlic bread!
