How to Make Beer Braised Short Ribs
- Season short ribs generously with salt and pepper. Heat 2 tablespoons of vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat. Brown the short ribs on all sides, about 6 minutes per side, until deeply golden brown. Remove ribs and set aside.
- Add 1 medium chopped onion to the Dutch oven and cook until softened, about 5 minutes. Add 2 cloves minced garlic and cook for another minute until fragrant.
- Pour in 1 (12-ounce) bottle of dark beer (stout or porter recommended), 1/2 cup brown sugar, and 1 cup beef broth. Stir well to combine and scrape up any browned bits from the bottom of the pot.
- Return the short ribs to the Dutch oven. Bring to a simmer, then cover and transfer to a preheated 325°F (160°C) oven. Braise for 2 hours, or until the meat is fork-tender.
- Remove short ribs from the Dutch oven and let rest for 10 minutes. Skim excess fat from the braising liquid. Whisk in 1/2 cup of your favorite barbecue sauce. Return the short ribs to the sauce and coat well.
- Preheat your grill to medium-high heat. Grill the short ribs for 5-10 minutes, turning occasionally, to add a smoky char and glaze them beautifully. Serve immediately and enjoy!
