How to Make African Peanut Chicken Soup
- Heat 1 tablespoon olive oil in a large pot over medium heat.
- Add 2-3 chicken breasts (about 1.5 lbs), diced, and cook until browned.
- Add 1 medium onion (about 1 cup chopped) and 3 cloves garlic, minced, to the pot.
- Stir and cook for 5 minutes, or until fragrant.
- Peel 2 medium sweet potatoes (about 1 lb) and either grate, finely chop, or microwave/bake until soft. If using the latter, mash well.
- Add the sweet potatoes to the pot along with 1 green bell pepper (1 cup chopped) and 1 red bell pepper (1 cup chopped).
- Pour in 2 (14.5 ounce) cans of chicken broth, 1 1/2 cups V8 or tomato juice, 1 teaspoon ground ginger, and 1/2 teaspoon cayenne pepper.
- Mix well to combine all ingredients.
- Bring the mixture to a boil, then reduce heat to low.
- Cover and simmer for 10-15 minutes, or until the vegetables are tender, stirring occasionally.
- Stir in 1/2 cup crunchy peanut butter continuously until completely smooth and well incorporated.
