  • Tart Green Apples
  • Belgian Endive
  • 1/4 cup slivered almonds, toasted
  • Oil
  • Lemon Juice
  • Garlic

How to Make Belgian Endive Salad

  1. Wash and thinly slice 1 large apple (Honeycrisp or Fuji recommended).
  2. Separate 1 bunch Belgian endives and remove any tough outer leaves. Cut the endives in half lengthwise, then slice crosswise into 1/2-inch thick pieces.
  3. 1/4 cup slivered almonds, toasted
  4. In a large bowl, gently combine the sliced apple, endives, and toasted almonds.
  5. In a small bowl, whisk together the dressing ingredients (see below).
  6. Pour the dressing over the salad and toss gently to combine.
  7. Serve immediately or chill for later. Garnish with extra almonds, if desired.
