- Tart Green Apples
- Belgian Endive
- 1/4 cup slivered almonds, toasted
- Oil
- Lemon Juice
- Garlic
- Salt
How to Make Belgian Endive Salad
- Wash and thinly slice 1 large apple (Honeycrisp or Fuji recommended).
- Separate 1 bunch Belgian endives and remove any tough outer leaves. Cut the endives in half lengthwise, then slice crosswise into 1/2-inch thick pieces.
- 1/4 cup slivered almonds, toasted
- In a large bowl, gently combine the sliced apple, endives, and toasted almonds.
- In a small bowl, whisk together the dressing ingredients (see below).
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill for later. Garnish with extra almonds, if desired.
