How to Make Berry Jam

  1. Combine 4 cups of mixed berries (strawberries, raspberries, blueberries, etc.) in a large, heavy-bottomed pot.
  2. Heat the berries over medium heat, stirring occasionally, until they release their juices and begin to soften (about 5-7 minutes).
  3. Add 1/4 cup of lemon juice and bring the mixture to a rolling boil for 2 minutes.
  4. Gradually add 3 cups of granulated sugar, stirring constantly to dissolve the sugar completely.
  5. Continue to boil the jam, stirring frequently, for 10-12 minutes, or until the setting point is reached (a small amount of jam placed on a chilled plate wrinkles slightly when pushed with a finger).
  6. Remove the jam from the heat and let it stand for 2 minutes.
  7. Skim off any foam that has formed on the surface.
  8. Carefully ladle the hot jam into sterilized jars, leaving 1/4 inch headspace.
  9. Wipe the rims of the jars clean, and seal with lids and rings. Process in a boiling water bath for 10 minutes to ensure proper sealing (optional, but recommended for long-term storage).
