How to Make Asparagus With Herbed Cheese On Toast
- Preheat your broiler.
- Trim the tough ends off the asparagus spears. Peel the lower third of the stalks with a vegetable peeler if desired.
- Bring a large pot of salted water to a boil. Add the asparagus and red onion; cook for 3-4 minutes, until bright green and crisp-tender.
- Immediately transfer the asparagus and onion to a bowl of ice water to stop the cooking process. Drain well and pat dry with paper towels.
- In a medium bowl, combine the softened goat cheese, thyme, chives, and chervil. Mix until well combined.
- Brush both sides of the baguette slices with olive oil and broil for 2-3 minutes per side, or until golden brown and slightly crisp.
- Spread the herbed goat cheese mixture evenly over the toasted baguette slices.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the asparagus and saute for 2-3 minutes until slightly warmed through.
- Season with salt and pepper to taste.
- Top each crostini with the sauteed asparagus and red onion.
- Serve immediately and enjoy!
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
