How to Make Bikkies Cookies From Heaven
- Preheat oven to 180°C (350°F).
- Line 3 baking trays with non-stick baking paper.
- In a stand mixer, beat 250g softened butter and 200g caster sugar until pale and creamy.
- Add 1 can (397g) sweetened condensed milk and 400g plain flour to the butter mixture, stirring until just combined. Be careful not to overmix.
- Stir in 150g dried cranberries (craisins) and 200g milk chocolate chips.
- Divide the dough into 2 equal portions. Wrap one portion and refrigerate while working with the first portion. Remove the second portion from the fridge once you've put the first batch of cookies in the oven.
- Roll tablespoons of the first portion of dough into balls and place them on the prepared trays, leaving some space between each cookie for spreading.
- Gently flatten each ball slightly using the palm of your hand.
- Bake for 8-10 minutes, or until golden brown, swapping trays halfway through for even baking.
- Let the cookies cool on the trays for 3 minutes before transferring them to a wire rack to cool completely.
- Repeat steps 7-10 with the remaining dough.
