How to Make Blueberry And White Chocolate Squares

  1. Preheat oven to 180°C (160°C fan/Gas Mark 4). Grease and line a 20cm square baking tin with parchment paper.
  2. Melt 175g white chocolate in a heatproof bowl set over a pan of simmering water, stirring occasionally. Set aside to cool slightly.
  3. Roughly chop the remaining 175g of white chocolate into small pieces.
  4. In a large bowl, cream together 175g softened unsalted butter and 175g granulated sugar until light and fluffy using an electric mixer.
  5. Beat in 3 large eggs one at a time, then stir in the cooled melted white chocolate and 1 teaspoon vanilla extract.
  6. In a separate bowl, whisk together 200g plain flour and ½ teaspoon salt. Gently fold the dry ingredients into the wet ingredients until just combined.
  7. Stir in the chopped white chocolate pieces and 200g fresh blueberries.
  8. Pour the batter into the prepared tin and spread evenly with a spatula.
  9. Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out with just a few moist crumbs attached.
  10. Let the squares cool completely in the tin before cutting into 36 squares.
