How to Make Blueberry Banana Bread

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a small bowl, toss 1 cup of blueberries with 1 tablespoon of flour. This helps prevent them from sinking to the bottom.
  3. In a large bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, ½ teaspoon salt, and ¾ cup granulated sugar.
  4. In a separate bowl, mash 3 ripe bananas. Add ½ cup milk and 1 large egg; mix well.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  6. Gently fold in the floured blueberries.
  7. Pour batter into the prepared loaf pan.
  8. Bake for 60-70 minutes, or until a wooden skewer inserted into the center comes out clean. The bread should also be pulling away from the sides of the pan.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
