How to Make Breakfast Pasta

  1. Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
  2. While pasta cooks, heat 1 tablespoon olive oil in a skillet over medium heat. Add minced garlic and sliced mushrooms; sauté for 5-7 minutes, until softened.
  3. Stir in sliced green onions. Remove from heat and set aside.
  4. In a bowl, lightly beat the eggs.
  5. In a large skillet, melt butter with the remaining 1 tablespoon olive oil over medium heat. Add the drained pasta and stir to coat.
  6. Pour in the beaten eggs and half of the Parmesan cheese. Stir constantly until the eggs are cooked and creamy, forming curds around the pasta. Add a splash of reserved pasta water if needed to loosen the mixture.
  7. Stir in the sauteed garlic, mushrooms, and green onions, basil and parsley.
  8. Add the chopped tomatoes and stir gently to combine.
  9. Serve immediately on plates. Season with freshly ground black pepper and top with the remaining Parmesan cheese.
