How to Make Chewy Honey Almond Energy Bars

  1. Line an 9x9 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium saucepan over medium-low heat, melt 1/2 cup honey and 1/2 cup almond butter, stirring constantly until smooth and creamy. Do not boil.
  3. Remove from heat.
  4. Add 1 cup rolled oats, 1/2 cup chopped almonds, 1/4 cup dried cranberries (or other dried fruit), and 1/4 cup shredded coconut (optional). Stir until all ingredients are evenly coated.
  5. Pour the mixture into the prepared pan. Place a second sheet of parchment paper on top and use your hands to firmly press the mixture into an even layer.
  6. Refrigerate for at least 1 hour, or until firm.
  7. Remove the bars from the pan using the parchment paper overhang. Cut into 12 bars.
  8. Wrap individually and store in an airtight container in the refrigerator for up to a week.
