- Preheat oven to 400°F (200°C).
- Cut 1/2 inch off the top of 4 medium apples (e.g., Honeycrisp, Fuji) and reserve the tops.
- Use a paring knife or melon baller to carefully hollow out the apples, leaving a 1/2-inch thick wall and base. Set aside.
- In a large skillet, melt 2 tablespoons of butter over medium heat.
- Add 1 cup fresh or frozen cranberries, 2 tablespoons honey, 1/2 teaspoon ground cardamom (or cinnamon), 1/4 cup chopped dates, 2 tablespoons orange juice, and 1 tablespoon orange zest.
