How to Make Chile Cheese Grits

  1. Preheat oven to 250°F (120°C).
  2. In a large saucepan, bring 4 cups of water to a boil. Gradually whisk in 1 cup of coarse ground grits. Reduce heat to low, cover, and cook for 20-25 minutes, or until tender, stirring occasionally to prevent sticking.
  3. Remove from heat and stir in 1 cup of shredded cheddar cheese, 1 cup of Monterey Jack cheese, 1 (4 ounce) can of diced green chilies (drained), 1/2 cup of chopped onion, 1/4 cup of butter, and 1 teaspoon of salt. Stir until cheese is melted and ingredients are well combined.
  4. Lightly grease a 9x12 inch baking dish with non-stick cooking spray. Pour the grit mixture into the prepared dish.
  5. Bake for 1 1/2 to 2 hours, or until golden brown and bubbly. Let stand for 10 minutes before serving.
