How to Make Chilled Canned Or Fresh Pea And Mint Soup

- Bring to a boil over medium heat, stirring constantly.
- Reduce heat to low, cover, and simmer for 30 minutes, or until peas are very tender.
- Let cool slightly. Puree the soup using an immersion blender, regular blender, or a fine-mesh sieve.
- Stir in 1/2 cup heavy cream. Mix well.
- Refrigerate for at least 2 hours to chill thoroughly.
- Serve chilled, garnished with fresh mint sprigs.
