How to Make Chilled Canned Or Fresh Pea And Mint Soup

  1. Shell 2 cups of fresh peas (or use 1 cup frozen peas).
  2. Melt 2 tablespoons of butter in a medium saucepan over medium heat. Add 1 small finely chopped onion and sauté until softened, about 5 minutes. Do not brown.
