How to Make Chocolate Banana Heaven Cake
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Line the bottoms of the pans with parchment paper.
- In a large bowl, combine cake mix and cocoa powder.
- Add eggs, prepared coffee (see note below), water, and mashed bananas.
- Beat with an electric mixer on low speed for 30 seconds, scraping down the bowl frequently.
- Beat on medium speed for 2 minutes.
- Pour batter evenly into the prepared pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pans for 10 minutes.
- Remove cakes from pans and immediately peel off the parchment paper.
- Cool completely on wire racks.
- While cakes cool, prepare the frosting: Dissolve 1 teaspoon instant coffee in 2 tablespoons of warm milk.
- In a separate bowl, beat cream cheese with an electric mixer on medium speed until creamy.
- Add the coffee-milk mixture and beat for 2 minutes.
- Melt semi-sweet chocolate (see note below) and blend it into the cream cheese mixture.
- Add powdered sugar gradually, beating until smooth and fluffy.
- Once cakes are completely cool, frost the layers with the cream cheese frosting.
- Immediately press chopped pecans onto the sides of the frosted cake.
- Garnish the top with chocolate curls (see note below).
- To make chocolate curls: Heat a 1-ounce square of semi-sweet chocolate in the microwave for a few seconds. Holding the chocolate firmly, use a vegetable peeler to create chocolate curls.
