How to Make Ciabatta Bread

  1. Combine all ingredients (see ingredient list below) in your bread machine pan according to your machine's manufacturer's instructions.
  2. Select the dough cycle on your bread machine and press start.
  3. Once the cycle is complete, the dough will be very sticky and wet. Do not add more flour!
  4. Gently turn the dough out onto a lightly floured surface. Cover with a large bowl and let rest for 15 minutes.
  5. Lightly flour two baking sheets or line them with parchment paper.
  6. Divide the dough in half. Gently shape each half into a roughly 3x14 inch oval. (Avoid excessive kneading).
  7. Place the loaves on the prepared baking sheets. Dimple the surface of each loaf with your fingers, creating a textured top. Lightly flour the tops of the loaves.
  8. Cover the baking sheets loosely with plastic wrap and let the loaves rise in a warm, draft-free place for 45-60 minutes, or until almost doubled in size.
  9. Preheat oven to 425°F (220°C).
  10. Gently dimple the dough surfaces again before baking. Place the loaves in the center of the preheated oven.
  11. Bake for 25-30 minutes, spritzing the loaves with water every 5-10 minutes for a crispier crust. Internal temperature should reach 200-210°F (93-99°C).
  12. Remove from oven and let cool completely on a wire rack before slicing and serving. Enjoy!
