How to Make Clootie Dumpling
- Prepare a large square (approximately 24x24 inches) of cotton or linen cloth. Boil a large pot of water.
- In a large bowl, combine all ingredients until well mixed. Add milk gradually until a thick, but not wet, consistency is achieved.
- Dip the linen cloth into the boiling water for a few seconds, then remove and wring out excess moisture. Sprinkle the cloth generously with flour (about 2 tbsp).
- Place the dumpling mixture in the center of the prepared cloth, leaving enough room around the edges to tie securely.
- Carefully gather the edges of the cloth and tie tightly with kitchen twine, ensuring the dumpling is completely sealed. Avoid overcrowding the cloth to prevent splitting.
- Place a heatproof plate in the bottom of a large saucepan. Carefully place the tied dumpling into the saucepan.
- Pour enough boiling water into the saucepan to cover the dumpling completely (about halfway up the sides of the dumpling).
- Bring the water back to a simmer, then reduce heat to low, cover, and simmer gently for 3 hours. Top up with hot water as needed to maintain water level.
- After 3 hours, carefully remove the dumpling from the saucepan using tongs. Place it on a wooden cutting board.
- Using a plate to support the dumpling, carefully untie and remove the cloth.
- Return the dumpling to the plate, cover it, and place it in a warm oven (around 150°F/65°C) for 10 minutes to rest.
- Turn the dumpling onto a clean plate and return it to the oven for another 10 minutes to dry slightly.
