  • Self Raising Flour
  • 100g icing sugar
  • 150g cold unsalted butter, cubed
  • 1 large egg
  • Apples
  • 100g currants
  • 50g brown sugar

How to Make Apple And Currant Slice

  1. Preheat oven to 180°C (350°F). Grease and line a 3cm deep, 24cm x 29cm lamington pan.
  2. In a food processor, combine 250g plain flour, 50g wholemeal flour, 100g icing sugar, and 150g cold cubed butter. Process until the mixture resembles breadcrumbs.
  3. Add 1 large egg and process until the dough just comes together.
  4. Turn the dough out onto a lightly floured surface and gently knead until smooth.
  5. Press two-thirds of the dough into the prepared pan.
  6. Refrigerate the base while you prepare the filling.
  7. Wrap the remaining dough in plastic wrap and place it in the freezer to firm up.
  8. Arrange 4 medium peeled, cored, and thinly sliced apples evenly over the chilled dough base.
  9. Sprinkle the apples with 100g currants, 50g brown sugar, and 1 teaspoon ground cinnamon.
  10. Grate the frozen dough over the apple filling using a box grater.
  11. Bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbly and slightly firm to the touch.
