How to Make Cornish Game Hens With Orange Stuffing

  1. Finely shred 1/4 teaspoon of orange zest (the outer colored part of the peel) using a microplane or fine grater.
  2. Remove and discard the remaining white pith from the orange peel.
  3. Section one orange over a bowl, juicing it thoroughly. You should aim for about 1/4 cup of juice.
