How to Make Crock Pot Old Fashioned Apple Butter West

  1. Wash, core, and quarter approximately 6 pounds of apples.
  2. Combine quartered apples and 1 cup of apple juice in a lightly oiled crock pot.
  3. Cover and cook on low for 10-18 hours or high for 2-4 hours, or until apples are very tender.
  4. Once tender, carefully transfer the apples to a food mill or sieve to remove peels and cores. Discard solids.
  5. Measure the sieved apple puree. You should have approximately 6 pints.
  6. Return the sieved apples to the crock pot.
  7. For each pint of sieved apples, stir in 1 cup granulated sugar, 1 teaspoon ground cinnamon, 1/2 teaspoon ground allspice, and 1/2 teaspoon ground cloves.
  8. Stir well to combine.
  9. Cover and cook on high for 6-8 hours, stirring every 2 hours to prevent sticking.
  10. Remove the lid after 3 hours to allow the apple butter to thicken.
  11. During the last hour of cooking, stir in 1/2 cup of Sauternes wine (optional).
  12. If canning, carefully spoon the hot apple butter into hot sterilized jars, leaving 1/4 inch headspace. Process according to standard canning methods for a shelf-stable product.
  13. Makes approximately 5 1/2 pints.
