How to Make Dads Favourite Stilton Quiche
- Preheat oven to 180°C (350°F/Gas Mark 5).
- Divide the pastry (200g) into two equal portions. On a lightly floured surface, roll each portion into a 15cm circle.
- Line two 12cm quiche tins or pie dishes with the pastry. Prick the bases with a fork.
- Place the quiche tins on a baking tray and blind bake for 10 minutes, using baking weights or dried beans to prevent puffing.
- Remove the baking weights and parchment paper. Reduce oven temperature to 175°C (347°F) and bake for a further 5 minutes.
- Gently sauté 100g of chopped spring onions in 1 tbsp butter for 2-3 minutes. Divide the spring onions evenly between the two quiche tins.
- Sprinkle 100g crumbled Stilton cheese evenly over the spring onions in each tin.
- In a jug, whisk together 3 large eggs, 150ml double cream, a pinch of salt, and freshly ground black pepper.
- Pour the egg mixture evenly over the Stilton in each tin.
- Return to the oven and bake for 20-25 minutes, or until the quiche is set and lightly golden brown on top.
- Let the quiche cool slightly before serving warm or cold with a fresh salad.
