How to Make Decadent Toffee Brownies

  1. Preheat oven to 160°C/320°F/Gas Mark 3/Fan 140°C. Grease and flour a 23cm x 23cm (9x9 inch) square baking tin.
  2. Melt 200g dark chocolate and 175g unsalted butter together in a heatproof bowl set over a pan of simmering water (or in the microwave). Stir until smooth and let cool slightly.
  3. In a separate bowl, whisk 3 large eggs until pale and fluffy. Gradually whisk in 200g muscovado sugar (or 200g dark brown sugar as a substitute) until the mixture is thick, glossy, and well combined.
  4. Gently fold the melted chocolate mixture into the egg and sugar mixture. Sift in 100g plain flour and 1 tsp baking powder. Gently fold until just combined. Do not overmix.
  5. Pour the batter into the prepared tin and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out with a few moist crumbs attached.
  6. The center will still be slightly soft; this is normal. It will firm up as it cools.
  7. Let the brownies cool completely in the tin on a wire rack for at least 1 hour (resist the urge to eat them!).
  8. Once cooled, cut into 16 squares and serve.
