How to Make Dream Cookies

  1. Preheat oven to 180°C (350°F).
  2. Grease a baking sheet. Bake only one sheet at a time, in the center of the oven.
  3. Roughly chop 170g of your favorite chocolate slab in a food processor until you have a mixture of dust and chunks.
  4. Separately, roughly chop 100g of macadamia nuts in a food processor.
  5. In a stand mixer, cream together 225g softened butter, 170g granulated sugar, 85g light brown sugar, 2 large eggs, and 1 teaspoon vanilla extract until light and fluffy.
  6. Reduce mixer speed to low. Gradually add 340g all-purpose flour and 1/2 teaspoon salt, mixing until just combined.
  7. Increase mixer speed to medium and mix for another minute until fully combined.
  8. Add the chopped chocolate, macadamia nuts, and 50g desiccated coconut to the bowl. Mix on low speed until evenly distributed.
  9. Roll rounded teaspoonfuls of dough into balls. Place them well apart (about 2 inches) on the prepared baking sheet.
  10. Bake for 15-20 minutes, or until the edges are golden brown and the tops are set.
  11. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Store in an airtight container.
