How to Make Dream Cookies
- Preheat oven to 180°C (350°F).
- Grease a baking sheet. Bake only one sheet at a time, in the center of the oven.
- Roughly chop 170g of your favorite chocolate slab in a food processor until you have a mixture of dust and chunks.
- Separately, roughly chop 100g of macadamia nuts in a food processor.
- In a stand mixer, cream together 225g softened butter, 170g granulated sugar, 85g light brown sugar, 2 large eggs, and 1 teaspoon vanilla extract until light and fluffy.
- Reduce mixer speed to low. Gradually add 340g all-purpose flour and 1/2 teaspoon salt, mixing until just combined.
- Increase mixer speed to medium and mix for another minute until fully combined.
- Add the chopped chocolate, macadamia nuts, and 50g desiccated coconut to the bowl. Mix on low speed until evenly distributed.
- Roll rounded teaspoonfuls of dough into balls. Place them well apart (about 2 inches) on the prepared baking sheet.
- Bake for 15-20 minutes, or until the edges are golden brown and the tops are set.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Store in an airtight container.
