How to Make Falooda
- In a small bowl, whisk together 2 tablespoons of cornflour and 1/2 cup of water until smooth.
- Cook the mixture over low heat, stirring constantly, until it becomes clear and thickens (about 5-7 minutes).
- Pour the mixture into a fine-mesh sieve placed over a bowl of ice water.
- Gently press the mixture through the sieve with the back of a spoon to create vermicelli-like strands. The strands will solidify in the ice water.
- Let the vermicelli sit in the ice water for at least 30 minutes. Drain well.
- In a saucepan, heat the milk and sugar until the sugar dissolves. Let cool completely, then refrigerate for at least 30 minutes.
- Soak the cellophane noodles in warm water until softened. Boil for a few minutes until transparent and then cut into short lengths.
- In serving glasses, add 2 tablespoons of basil seeds and 2 tablespoons of the prepared cornflour vermicelli (or cellophane noodles).
- Pour in the chilled milk.
- Add rose syrup and crushed ice to taste.
- Top with a scoop of vanilla ice cream.
- Serve immediately and enjoy your refreshing Falooda!
