How to Make Fruity Granola Bars

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine 2 cups rolled oats and 1 cup shredded coconut.
  3. Spread the oat and coconut mixture evenly on an ungreased baking sheet.
  4. Bake for 15-20 minutes, stirring every 5 minutes, until fragrant and the coconut is golden brown.
  5. Remove from oven and let cool slightly.
  6. In a large bowl, whisk together 1/2 cup brown sugar, 1/4 cup honey, 1/4 cup melted unsalted butter, 1 teaspoon vanilla extract, and 1/4 teaspoon salt until well combined.
  7. Add the cooled oat and coconut mixture to the wet ingredients.
  8. Stir until the oat mixture is evenly moistened.
  9. Stir in 1 cup dried cranberries and 1 cup dried apricots.
  10. Stir until the fruit is evenly distributed.
  11. Line a 9x13 inch baking pan with foil, leaving a 1-inch overhang on the long sides.
  12. Lightly grease the foil with cooking spray.
  13. Transfer the oat mixture to the prepared pan.
  14. Press the mixture firmly and evenly into the pan.
  15. Bake in a preheated 325°F (165°C) oven for 40-45 minutes, or until the granola bars are set and golden brown.
  16. Let the granola bars cool completely in the pan.
  17. Once cooled, lift the granola bars from the pan using the foil overhang.
  18. Carefully peel off the foil.
  19. Cut the granola bars lengthwise into thirds, then cut each third into ten 1 1/4 inch wide bars.
  20. Wipe the knife blade or rinse under hot water between each cut for clean slices.
  21. Wrap individual bars in plastic wrap or store in a resealable freezer bag for longer storage.
  22. Makes approximately 30 bars.
