How to Make Fruity Granola Energy Bars

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a 9x9 inch baking pan with non-stick cooking spray or butter.
  3. In a large bowl, combine 3 cups rolled oats, 1/2 cup wheat germ, 1 cup chopped dried apricots (or your choice of dried fruit), 1/2 cup raisins (or your choice of dried fruit), 1/2 cup sunflower seeds, 1 teaspoon ground cinnamon, and 1/4 teaspoon salt.
  4. In a separate bowl, melt 1/2 cup (1 stick) unsalted butter. Stir in 1/2 cup packed brown sugar until completely dissolved.
  5. Add 1/4 cup honey, 1 large egg, and 1 teaspoon vanilla extract to the melted butter mixture. Whisk until smooth and well combined.
  6. Pour the wet ingredients into the dry ingredients and stir until all ingredients are evenly moistened. The mixture will be slightly sticky.
  7. Press the mixture firmly and evenly into the prepared baking pan.
  8. Bake for 20-25 minutes, or until golden brown and firm to the touch.
  9. Let the bars cool completely in the pan before cutting into squares or bars.
  10. Once cooled, cut into 16 bars. Wrap individually in plastic wrap or parchment paper for easy storage and portability.
