How to Make George's Sushi

  1. Cook sushi rice according to package directions. While still warm, gently mix in rice vinegar, sugar, and salt.
  2. Place a sheet of plastic wrap on your bamboo mat for easier cleanup.
  3. Spread the cooked rice evenly onto the plastic wrap-covered bamboo mat in a rectangle shape (about 1/4 inch thick).
  4. Spread half of the softened cream cheese over the top half of the rice.
  5. Arrange half of the julienned carrots evenly over the cream cheese.
  6. Using the bamboo mat, carefully lift and roll the rice into a tight log.
  7. Gently tuck in the ends of the roll to prevent filling from escaping.
  8. Refrigerate for at least 20 minutes to allow the roll to firm up.
  9. Remove from refrigerator, unwrap, and cut into 6 equal slices.
  10. Serve immediately and enjoy!
