How to Make Gingered Lemonade

  1. Mash 1 cup sugar, 1/2 cup peeled and thinly sliced fresh ginger, and 1 cup thinly sliced lemons in a large bowl using a potato masher or wooden spoon until the lemon slices release their juice, the sugar dissolves, and the mixture thickens into a syrup (about 4 minutes).
  2. Pour half of the lemon-ginger mixture through a fine-mesh sieve into a separate bowl, pressing on the solids with the back of a spoon to extract as much liquid as possible.
  3. Discard the solids.
  4. Repeat steps 2 and 3 with the remaining lemon-ginger mixture.
  5. Transfer the strained liquid to a large pitcher.
  6. Add 4 cups of cold water to the pitcher and stir well to combine.
  7. Chill thoroughly in the refrigerator for at least 30 minutes.
  8. Stir gently before serving over ice. Garnish with additional lemon slices and/or candied ginger (optional).
