  1. In a large bowl, thoroughly combine 1 medium onion, chopped; 1 cup white vinegar; and 2 tablespoons canning salt. Let stand overnight in the refrigerator.

  3. In a large kettle or pot, combine 6 cups chopped zucchini, 1 green bell pepper (chopped), 1 red bell pepper (chopped), 1 cup sugar, 1 cup cider vinegar, 1/2 cup yellow mustard seeds, 1/4 cup celery seeds, 1 tablespoon turmeric, 2 teaspoons ground ginger, and 1 teaspoon ground cloves.
  4. Bring the mixture to a rolling boil over medium-high heat.
  5. Add the drained onion mixture to the kettle.
  6. Return the mixture to a boil, then reduce heat and simmer uncovered, stirring occasionally, for 30 minutes, or until the zucchini is tender.
  7. Carefully ladle the hot relish into sterilized canning jars, leaving 1/2 inch headspace.
  8. Process in a boiling water bath for 5 minutes to ensure a proper seal. Remove jars and let cool completely. Check seals by pressing on the center of each lid. Refrigerate any unsealed jars and consume within a week.
