How to Make Greek Thiples
- In a large bowl, beat 2 large eggs until light and fluffy.
- Gradually add 2 cups all-purpose flour and 1/2 teaspoon salt to the beaten eggs, mixing until a soft dough forms.
- Add 1/2 cup more flour, or as needed, to form a soft, non-sticky dough.
- Turn the dough out onto a lightly floured surface. Spread 2 tablespoons of softened butter over the dough, gently incorporating it into the dough.
- Knead the dough for 5-7 minutes, until smooth and elastic.
- Divide the dough into 4 equal portions.
- On a lightly floured surface, roll out one portion of dough at a time to a paper-thin rectangle, keeping the remaining dough covered to prevent it from drying out. (A pasta machine can be used for this step).
- Cut the rolled dough into 2 x 6 inch strips.
- Heat about 2 inches of vegetable oil in a large skillet to 365°F (185°C).
- Carefully add several strips of dough to the hot oil. Using two forks, gently turn the strips and move them around to prevent sticking and ensure even frying.
- Fry for 1-2 minutes per side, or until lightly golden brown.
- Remove the fried thiples and place them on a paper towel-lined plate to drain any excess oil.
- While the thiples are still warm, drizzle with a mixture of 1/4 cup honey and 1 tablespoon of hot water.
- Sprinkle generously with 1 teaspoon ground cinnamon and 1/4 cup finely chopped walnuts or pecans.
- Serve immediately and enjoy warm! Best enjoyed with fingers.
