How to Make Ground Beef Stuffed Green Bell Peppers With Cheese

  1. Preheat oven to 350°F (175°C).
  2. Cut the tops off 4 large green bell peppers. Remove seeds and membranes.
  3. Finely chop 1/4 cup of the pepper tops; set aside.
  4. Blanch whole peppers in boiling water for 5 minutes. Invert to drain well.
  5. Lightly salt the inside of the peppers.
  6. In a large skillet, brown 1 lb ground beef over medium-high heat. Add 1 medium onion (chopped) and the 1/4 cup chopped pepper tops; cook until softened (about 5-7 minutes).
  7. Drain excess fat from the skillet.
  8. Stir in 1 (14.5 ounce) can diced tomatoes (undrained), 1 teaspoon salt, 1 tablespoon Worcestershire sauce, 1/2 teaspoon black pepper, and 2 teaspoons hot pepper sauce.
  9. In a separate saucepan, cook 1 cup of long-grain rice according to package directions.
  10. Add cooked rice to the beef mixture. Stir in 1 cup shredded cheddar cheese.
  11. Fill each pepper with the beef and rice mixture.
  12. Arrange stuffed peppers in a 10x6x2 inch baking dish.
  13. Bake, covered, for 30 minutes.
  14. Uncover and bake for an additional 5-10 minutes, or until peppers are tender and cheese is melted and bubbly. Add extra shredded cheese during the last 5 minutes of cooking if desired.
