- 2 lbs venison stew meat (or substitute with beef)

How to Make Awesomest Chili Ever
- In a large pot or Dutch oven, brown 2 lbs of venison (or beef) stew meat over medium-high heat. Remove meat and set aside.
- Add 1 large onion, chopped, and 2 cloves garlic, minced, to the pot and sauté until softened, about 5 minutes.
- Stir in 1 red bell pepper, chopped, and 1 green bell pepper, chopped, and cook for another 3 minutes.
- Return the meat to the pot. Add 28 oz (1 can) crushed tomatoes, 15 oz (1 can) tomato sauce, 1 (15 ounce) can of kidney beans (drained and rinsed), 1 (15 ounce) can of pinto beans (drained and rinsed), 1 cup beef broth, 1/2 cup dry red wine, 2 tablespoons chili powder, 1 tablespoon cumin, 1 teaspoon smoked paprika, 1 teaspoon oregano, 1/2 teaspoon cayenne pepper (optional), and 1 teaspoon salt.
- Bring to a boil, then reduce heat to low, cover, and simmer for at least 4 hours, or up to 6 hours for a deeper, richer flavor. Stir occasionally.
- Taste and adjust seasonings as needed. Consider adding more cayenne for extra heat or a touch of brown sugar to balance the acidity.
- Before serving, garnish with your favorite toppings such as shredded cheddar cheese, sour cream, or chopped green onions.
