How to Make Hawaiian Pineapple Iced Tea

  1. In a heatproof pitcher, combine 4 tea bags (black tea recommended) and 2 cups (475ml) of boiling water.
  2. Add 1/2 cup (10-12) fresh mint leaves.
  3. Steep for 10 minutes, then remove tea bags and mint leaves.
  4. If using fresh pineapple: Cut a medium pineapple (about 2 cups, 475ml cubed) into chunks and blend with 1 cup (240ml) of ice water until smooth. If you prefer a clearer drink, strain the mixture through a fine-mesh sieve.
  5. If using pineapple juice: Have 2 cups (475ml) of pineapple juice ready.
  6. Add 1/2 cup (100g) of sugar or your preferred sweetener to the brewed tea. Stir until dissolved.
  7. Add the blended pineapple (or pineapple juice) to the tea.
  8. Add 1/4 cup (60ml) of fresh lemon juice.
  9. Stir well to combine.
  10. Add 2 cups (475ml) of cold water to dilute to your preferred strength.
  11. Refrigerate for at least 30 minutes to chill thoroughly before serving over ice.
