How to Make Heavenly Eggs

  1. In a medium bowl, whisk together 4 large eggs and 2 large egg whites until lightly frothy.
  2. Add 1 tablespoon of sour cream, 1 tablespoon of water, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Whisk until well combined.
  3. Heat 1 tablespoon of margarine or butter in a heavy-bottomed skillet over medium-low heat. Once melted and shimmering, pour in the egg mixture.
  4. Let the eggs cook undisturbed for a minute or two, until the edges begin to set. Then, gently push the cooked edges towards the center with a spatula, tilting the pan to allow uncooked egg to flow underneath.
  5. Continue gently pushing the cooked egg towards the center, tilting the pan as needed, until the eggs are mostly set but still slightly moist. Do not overcook.
  6. Remove from heat and stir in 1/4 cup of shredded cheddar cheese (or your preferred cheese). Stir gently until the cheese is melted and incorporated.
  7. Serve immediately and enjoy your Heavenly Eggs!
