How to Make Homemade Sweet Chilli Jam
- Roughly chop 200g red chilies, 1 large red onion, and 4 cloves of garlic.
- Place the chopped chilies, onion, and garlic in a food processor. Process until you achieve a rough paste.
- Heat 2 tablespoons of vegetable oil in a medium-sized saucepan over medium heat.
- Add the chili mixture to the saucepan and cook for 10 minutes, stirring occasionally, until softened but not browned.
- Add 200g of granulated sugar and 100ml of rice vinegar (or white wine vinegar). Bring the mixture to a boil, stirring constantly until the sugar dissolves completely.
- Reduce the heat to low and simmer for 15-20 minutes, or until the jam has thickened and become syrupy, stirring occasionally to prevent sticking.
- Remove from heat and stir in 2 tablespoons of fish sauce (adjust to your preferred level of saltiness). Taste and adjust seasoning as needed.
- While still warm, carefully pour the sweet chili jam into sterilized glass jars or bottles. Seal tightly and allow to cool completely before storing in the refrigerator.
