How to Make Jeera On Cubes Barbecue Marinade
- Roast 2 tablespoons of coriander seeds and 1 tablespoon of cumin seeds in a dry pan until fragrant. Let cool, then grind to a powder using a mortar and pestle or spice grinder.
- Mince 2-3 green chilies (adjust to your spice preference).
- In a bowl, combine the roasted spice powder, minced chilies, 1/4 cup of yogurt, 2 tablespoons lemon juice, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/4 teaspoon turmeric.
- Add 1/4 cup of finely chopped fresh cilantro and mix well.
- Add 2 cloves minced garlic to the marinade 4-8 hours before barbecuing if marinating for longer than 8 hours.
- Add your meat cubes (approximately 1.5 lbs) to the marinade and ensure they are thoroughly coated. Marinate for 4-48 hours, refrigerated. The longer it marinates, the better the flavor!
- Preheat your barbecue grill to medium-high heat.
- Barbecue the meat cubes, turning occasionally, until cooked through (about 10-15 minutes depending on size and type of meat and desired doneness).
- Serve immediately and enjoy!
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
