How to Make Authentic Mexican Arroz Roja
- Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat. Add 2 cloves of minced garlic, 1/2 medium onion (finely chopped), and 1/4 cup of your favorite red chile sauce. Sauté for 1 minute, stirring frequently, until fragrant.
- Add 1 1/2 cups of long-grain rice to the pot and stir constantly for 2-3 minutes, until the rice begins to toast and become slightly translucent.
- Pour in 3 cups of chicken broth and bring the mixture to a boil. Stir in an additional 1/4 cup of red chile sauce.
- Reduce heat to low, cover the pot tightly, and simmer for 18-20 minutes, or until all the liquid is absorbed and the rice is tender. Do not lift the lid during cooking.
