How to Make Hot Bandanas

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine the chopped olives, red onion, diced tomatoes, and shredded cheeses.
  3. In a small jar with a lid, whisk together the minced garlic, salt, pepper, 1/4 cup fresh basil, red wine vinegar, and olive oil. Shake well to create a dressing.
  4. Pour the dressing over the cheese and vegetable mixture. Toss gently to coat.
  5. Prepare the rolls: Cut a 2-inch diameter plug from the top of each roll, carefully removing the soft inside while leaving some bread at the bottom. Set aside the removed bread for breadcrumbs (optional).
  6. In a small saucepan, melt the butter. Add a few fresh basil leaves and let them infuse for 2-3 minutes. Remove basil leaves before brushing.
  7. Brush the basil butter inside each roll bottom.
  8. Fill each roll with about 2/3 cup of the cheese and vegetable mixture.
  9. Replace the roll tops.
  10. Wrap each sandwich individually in aluminum foil.
  11. If not baking immediately, refrigerate for at least 1 hour before baking. Remove from refrigerator about 30 minutes before baking.
  12. Bake for 20-25 minutes, or until heated through and the cheese is melted and bubbly.
  13. Garnish with extra fresh basil leaves and serve immediately.
