How to Make In The Zone Stuffed Bell Peppers

  1. Microwave 4 medium green bell peppers in a small bowl with 1/4 cup water and a pinch of salt for 5-7 minutes, or until slightly tender. Be careful as they will be hot.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add 1 pound lean ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add 1 cup diced onion, 1 cup diced green bell pepper (from the peppers used in step 1 or others if preferred), 1 (14.5 ounce) can diced tomatoes, undrained, and 1/2 cup cooked brown rice to the skillet. Season with salt and pepper to taste. Saute for 8-10 minutes, or until vegetables are tender.
  4. Preheat oven to 350°F (175°C).
  5. Fill each cooked bell pepper with the meat and vegetable mixture.
  6. Place the stuffed peppers in a baking dish. Pour any remaining vegetable mixture around the peppers.
  7. Bake for 30 minutes, or until peppers are tender and filling is heated through.
  8. Remove from oven and top with 1/2 cup shredded cheddar cheese (or your preferred cheese).
  9. Let stand for 5 minutes before serving. Enjoy!
