How to Make Kids Jacket Potatoes

  1. Preheat oven to 200°C (400°F).
  2. Line a baking tray with baking paper.
  3. Wash and scrub 4 medium-sized potatoes. Pierce each potato several times with a fork.
  4. Rub potatoes with 1 tablespoon olive oil and sprinkle with a pinch of salt.
  5. Place potatoes on the prepared baking tray.
  6. Bake for 50-60 minutes, or until the potatoes are tender and the skins are crispy.
  7. While the potatoes are baking, cook 150g of bacon until crispy. (Fry in a pan or microwave until desired crispness)
  8. Steam or microwave 200g broccoli florets until tender-crisp.
  9. Once the potatoes are cooked, allow them to cool slightly. Cut each potato in half lengthwise.
  10. Gently scoop out the potato flesh, leaving a 1/2 cm border to maintain the shell.
  11. In a bowl, combine the potato flesh, cooked bacon, broccoli, and 100g sour cream.
  12. Season generously with salt and pepper to taste.
  13. Spoon the mixture back into the potato skins, piling it high.
  14. Sprinkle generously with 50g grated cheddar cheese.
  15. Return the loaded potatoes to the oven for 5-10 minutes, or until the cheese is melted and bubbly.
  16. Serve immediately and enjoy!
