How to Make Kielbasa Bacon Hash

  1. Peel and cube potatoes into approximately 1-inch cubes.
  2. In a large pot, bring water to a boil. Add a generous pinch of salt and the cubed potatoes. Boil until almost tender, about 8-10 minutes. Drain well and set aside.
  3. While potatoes are boiling, dice the bacon and cook in a large skillet over medium heat until crispy. Remove bacon from pan and set aside, reserving about 2 tablespoons of bacon grease in the pan.
  4. Add the chopped onion and bell pepper to the skillet with the bacon grease. Sauté until softened, about 5-7 minutes.
  5. Add the sliced kielbasa to the skillet and cook until lightly browned, about 5-7 minutes.
  6. Add the cooked potatoes to the skillet.
  7. Stir in the cooked bacon. Season with salt to taste.
  8. If desired, you can add more oil if the hash is too dry, then combine everything and cook over medium heat for about 5 minutes until warmed through and slightly crispy.
  9. Serve immediately and enjoy!
