How to Make Kielbasa Bacon Hash
- Peel and cube potatoes into approximately 1-inch cubes.
- In a large pot, bring water to a boil. Add a generous pinch of salt and the cubed potatoes. Boil until almost tender, about 8-10 minutes. Drain well and set aside.
- While potatoes are boiling, dice the bacon and cook in a large skillet over medium heat until crispy. Remove bacon from pan and set aside, reserving about 2 tablespoons of bacon grease in the pan.
- Add the chopped onion and bell pepper to the skillet with the bacon grease. Sauté until softened, about 5-7 minutes.
- Add the sliced kielbasa to the skillet and cook until lightly browned, about 5-7 minutes.
- Add the cooked potatoes to the skillet.
- Stir in the cooked bacon. Season with salt to taste.
- If desired, you can add more oil if the hash is too dry, then combine everything and cook over medium heat for about 5 minutes until warmed through and slightly crispy.
- Serve immediately and enjoy!
