How to Make Limeade Nam Manao

  1. Juice enough limes to yield 1 cup (240ml) of fresh lime juice. Reserve the lime rinds.
  2. Set aside the lime juice and lime rings for later use.
  3. Pour 4 cups (960ml) of water into a 2-quart microwavable glass measuring cup.
  4. Microwave uncovered for 6-8 minutes on high, until the water is almost boiling (small bubbles will form on the surface).
  5. Remove from microwave and stir in ¾ cup (150g) granulated sugar and ½ teaspoon of salt until completely dissolved.
  6. Add the reserved lime rinds to the hot syrup. Let the mixture steep for 10 minutes to infuse the flavor.
  7. Using a fine-mesh sieve, strain the mixture into a pitcher, pressing on the rinds to extract as much juice as possible.
  8. Stir in the reserved 1 cup (240ml) of fresh lime juice.
  9. Refrigerate for at least 30 minutes to allow the flavors to meld and the limeade to chill thoroughly.
  10. To serve, fill a tall glass with ice. Pour in the chilled limeade.
  11. Garnish with a lime wedge and a fresh sprig of mint (optional).
